Here are three simple ideas for decorating a heart shaped sponge cake for Valentine's day or any other romantic occasion. Very easy, yet very nice.

  1. Preheat the oven to 160 C / Gas 2. Grease and flour a heart shaped cake tin.
  2. Beat 4 egg yolks and 150g sugar together using an electric beater until light and frothy; add vegetable oil, lemon juice, vanilla extract and water. Continue to beat until smooth.
  3. Add flour and baking powder; continue to beat until you obtain a smooth, frothy mixture.
  4. Wash and dry the electric beaters. Then use them to beat 4 egg whites with one or two pinches of bicarbonate of soda, until soft peaks form. Fold egg white mixture into the cake batter.
  5. Pour the cake mixture into the tin. Place a smaller heart shaped cookie cutter in the centre of the uncooked cake, pressing it down slightly to ensure it stays in the middle during cooking.
  6. Bake in the preheated oven for 40 minutes, or until a skewer inserted into the centre of the cake comes out clean. Remove cake from oven; cool at room temperature.
  7. Transfer onto a serving plate; use a knife to carefully remove the heart shaped cookie cutter (and cake inside it) from the middle of the cake. The following are 3 ideas to decorate the small heart in the centre:

DIY Project: Heart-Patterned Cake Roll


My love of desserts is legendary. Most of my friends know me as someone who will regularly bypass entire savory meals in exchange for a piece of chocolate cake the size of my head. I’m not sure how I got wired that way, but nothing makes me happier than a great piece of cake. So for Valentine’s Day, I love finding creative ways to dress up desserts for the holiday. (Side note: In college I bought (and consumed) an entire heart-shaped Carvel Ice Cream Cake. One of my best Valentine’s Days ever). Whether you’re making this for yourself, friends, family or loved ones, it’s hard to go wrong with a sweet heart-themed dessert.

This clever project comes from Raiza Costa. Originally from Brazil, Raiza now lives in New York City, where she loves to cook and bake for fun. She came up with this creative heart-patterned cake roll and made a new version for us that uses only natural ingredients (no artificial dyes). I think this is such a fun thing to make for the holiday and it would be equally cute (and just as easy to do) using just white hearts, if pink and red aren’t your thing. This chocolate-patterned cake roll filled with whipped white chocolate ganache and strawberries is one of my favorite recipes because not every cute pastry can be this delicious and fair – and by fair, I mean a pastry that is not loaded with tons of sugar and food coloring. For my pinkish heart pattern I used raspberry syrup to dye the batter and cocoa powder to make the cake chocolaty, the filling itself is extra simple and only requires 3 ingredients. In fact, this entire cake roll only requires 7 ingredients, and if you want to make a plain cake it only requires 6, can you believe that?

This rolled cake (aka Swiss roll cake or Deco roll) can be made in chocolate or regular plain cake. (For the plain sponge cake recipe click here). The filling chosen for this was whipped ganache, which is a ganache cooled and then whipped. It achieves frosting-like consistency and it’s perfect to top any cake.

Yields one 11名 cake roll

-1 egg white
-30g granulated sugar
-40g flour – if making chocolate pattern substitute 20g for cocoa powder
-20g butter – room temperature
-Natural food coloring, fruit syrup or any food coloring of your preference.

-1 tsp cream of tartar
-1/2 cup + 1 tbsp sugar
-60g butter – melted (approximately 1/2 stick + 1 tbsp)
-1/2 cup flour
-1/4 cup cocoa powder (if making plain rolled cake substitute this for flour)

For the filling:

-1 1/2 cup white chocolate – or any other chocolate
-1 cup heavy cream – or whipping cream
-1 cup strawberries – quartered

-Baking pan (11名 in.)
-Parchment paper (it won’t work if you use wax paper)
-Pastry bag or Ziploc bag

1 1/2 teaspoons (6 grams) pure vanilla extract

1/4 teaspoon (1 gram) cream of tartar

Chocolate Whipped Cream:

1/2 cup (120 ml) cold heavy whipping cream (cream with a 35-40% butterfat content)

1/4 teaspoon (1 gram) pure vanilla extract

2 tablespoons (25 grams) granulated white sugar

1 tablespoon (7 grams) unsweetened cocoa powder

3/4 cup (180 ml) heavy whipping cream (cream with a 35-40% butterfat content)


Butter and line two 8” cake tins with baking parchment. Cream butter and sugar until pale and fluffy. Beat in eggs one at a time, occasionally scraping the bowl. Whisk flour and baking powder together with salt. Add flour mixture to butter mixture and continue to mix until incorporated. Add milk and mix until combined. (Do not over-mix or the cake will become tough.)

Pour into the prepared baking tins. Bake at 350°F, about 30 to 35 minutes, until risen. (A skewer should come out clean.) Cool completely. Spread one cake with jam. They are available in various flavors and each flavor is distinct and tasty. The main batter to make the cake is almost similar for most of the cakes but the icing on the cakes changes with each cake.

For example, chocolate cake uses chocolate icing on the cake where as pine apple cake uses pineapple flavored icing on the cake.

Many cakes appear in various shapes and sizes, some of them look round in shape, heart shaped and some appear reactangular or square shape.

In this cake recipe I have made the vanilla sponge cake recipe in rectangle shape but one can use a cake pan of any shape to make the cake.


Recipe Summary

  • 1/4 cup cocoa powder
  • 2 tablespoons red food coloring
  • 6 tablespoons unsalted butter, room temperature
  • 1 tablespoon plus 1 1/2 teaspoons vegetable shortening, at room temperature
  • 1 2/3 cups sugar
  • 3 large eggs
  • 1 cup buttermilk
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups cake flour (not self-rising)
  • 1 teaspoon salt
  • 1 tablespoon cider vinegar
  • 1 teaspoon baking soda
  • 1/4 cup melted dark chocolate, for decorating
  • Speckled Cinnamon Frosting

Preheat oven to 325 degrees with rack in the center of the oven. Butter an 18-by-13-inch rimmed baking sheet, line with parchment paper, butter parchment, and set aside.

In a medium bowl, whisk together cocoa powder, food coloring, and 1/4 cup boiling water. Set aside to cool.

In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and shortening on high speed until smooth. Add sugar and continue beating until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition.

Stir buttermilk and vanilla into cocoa mixture. Into another medium bowl, sift together flour and salt. With the mixer on low, add flour mixture alternating with cocoa mixture, beginning and ending with flour mixture. Beat until incorporated.

In a small bowl, mix together vinegar and baking soda until baking soda dissolves mixture will fizz. Add to batter and mix until just combined.

Pour batter into prepared baking sheet, smoothing the top. Bake until a cake tester inserted into the center of the cake comes out clean, 20 to 30 minutes, rotating pan after 10 minutes.

Cook cake completely on a wire rack. Using a 4-inch heart-shaped cookie cutter, cut out 12 hearts.

Place 4 strips of parchment paper around perimeter of a serving plate or lazy susan. Place 1 layer on the cake plate. Spread a thin layer of frosting on the cake top with another heart, bottom side up. Cover entire cake with a thin layer of frosting and transfer to refrigerator for 10 minutes. Repeat process with remaining ingredients.

Remove cakes from the refrigerator and cover each cake with a generous layer of frosting, smoothing as you go around to create a flat surface.

Place chocolate in a pastry bag fitted with a small plain round tip decorate as desired.
