Method of preparation

I have to present you a short situation from which you can understand how important papanas are to my family! It all starts when my father comes from the country with 2 bottles of milk, apples, pears, plums, grapes, strawberries, peaches, potatoes, tomatoes, cucumbers, eggs, etc. And he comes, of course, with the piece of resistance: sweet cheese cows !! He puts it on the table and my mother quickly puts the cream next to it and the jam without asking any more questions. My sister also comes, of course, and asks quickly: & quotWhere are the papanas? Are they ready? When do you make them? How long does it take? & Quot and woe to my head then there is no way back when I am caught in the middle and everyone is waiting, like little children after Santa Claus, to make papanasi! :)) Now it hurts, I like papanas too, but I would immediately put my hand on the pot to boil it with water and make some macaroni :)).

Nah let it be nothing, we immediately make the papanas and enjoy them with a good plum jam! I made the papanas look smaller and finer but I have days and when I make them out of no water you can't drink after one, their stomach is so full! For bigger and thicker papanas, add an extra teaspoon of baking powder :)

Papanas fried with cheese and served with sour cream and jam are part of childhood desserts. These fluffy and fragrant donuts were often prepared by my mother or grandmother, and I was in the landscape just to devour as many of them as possible.

I loved this dessert, but I rarely prepare it. In the last few weeks, the thought has kept slipping towards these delicious papanasi, bathed in sour cream and blueberry jam. And since you can't get over your appetite, I quickly went to the market to buy cheese and sour cream.

The cheese must be good, fresh and as dry as possible, because this way it will not absorb a lot of flour and the papanas will be fluffy. If the cheese is wet, the amount of flour used will increase and the papanas will be stronger.

The papanas recipe is simple and quick to prepare.

Ingredients for the recipe for fried papanasi recipe with cheese:

  • 500 gr of cottage cheese
  • 2 eggs
  • 60 grams of sugar
  • The peel of an organic lemon
  • Vanilla essence
  • 1 pinch of salt
  • 1 teaspoon baking powder
  • 1 tablespoon grated semolina (optional)
  • 320-350 gr of flour (depending on cheese and eggs)
  • Frying oil
  • Cream or yogurt for serving
  • Jam or jam to serve

In a bowl, I mixed the cottage cheese with the two eggs, the sugar, the grated lemon peel, the vanilla essence and the salt. With the help of a fruculite I ground the cheese finely and I homogenized the ingredients. I then added flour, baking powder and semolina. I kneaded the dough, then covered it and left it in the fridge for at least 30 minutes. During this time the flour and semolina will absorb more moisture.


After I took the dough out of the fridge, I greased my hands with oil and divided the dough into 8 large balls and 8 small balls. I flattened the big balls and with the help of my finger I made a hole in the middle of them. In this way I shaped the papanas. I rounded the small balls well, because they will be the top of the dessert.

I heated oil in a pan and fried the papanas for approx. 4 minutes turning them on both sides, or until they turn golden. I took them out on the kitchen napkins to get rid of the excess oil, then I served the papanasis with sour cream and blueberry jam in abundance.


The pappas were fluffy, slightly crispy on the outside and absolutely delicious!

The flame for papanasi with sour cream and jam is medium, so as not to smoke, but to keep the temperature high.

The dough from the papanasi recipe should swell nicely during frying, and after a maximum of 3 minutes, return to the other side, where it is kept for at least 2 minutes. Remove to a plate or larger tray with kitchen paper to absorb excess fat.

For the presentation, you will put a ring of papanasi with yogurt and a ball on top, then add the jam and sour cream or yogurt. You can sprinkle with powdered sugar if you want an extra sweet. Thus, you got some tasty papanasi with jam.

In a bowl put the cheese, salt, vanilla sugar and cinnamon. Add a teaspoon of baking powder, then grind everything with a fork and mix, then add the two eggs. Homogenize the composition with eggs and cheese, then add flour and begin to incorporate with a spoon, then knead.
